Creative Light Eating (Recipe)
I try to eat healthy, at least 95% of the time, and when I
can remake a traditional recipe that may have a high fat or calorie content
into one a little bit more health conscious, I feel better knowing that I have
made the decision to make better choices while still eating the things I love.
And I am a girl from the South and I love nachos! These Tex-Mex
favorites are awesome with, refried beans, spicy beef all layered and covered
with melted cheddar cheese with shredded lettuce, avocado, etc. are Awesome!!!
Once in a while I still indulge in this delicious, but not very waistline
friendly food, but for the most part I have managed to find a suitable
substitute, so if you like spicy foods, try the following recipe. I think you'll agree that they are very tasty!
Spicy Deluxe Nachos
Makes one to two servings:
½ pound extra-lean ground round or lean ground(without the
skin) turkey, browned and drained well.
¼ cup no-fat (or vegetarian) refried beans
One to two tablespoons of taco seasoning mix
2-4 ounces plain regular or baked tortilla chips
1 ounce shredded 2% fat cheddar cheese
1-2 cups lettuce, shredded
one tomato, chopped
¼ c. onion, chopped
¼ avocado, chopped
1-2 tablespoons light sour cream
jalapenos, chopped
sliced black olives, if desired
salt, pepper, and salsa to taste
brown ground beef or turkey in medium pan, drain well, add
seasoning mix with small amount of water, simmer for about 5 minutes. Place
tortilla chips on a microwaveable plate or serving tray, layer meat, refried
beans and shredded cheese and microwave for 30 seconds or one minute (depending
on microwave) until cheese is melted. Remove from heat. Spread sour cream, and
salsa if desired. Add the lettuce, tomato, onion, avocado. Garnish with black

I like them because they are quick enough to make for a
lunch or an easy dinner, when you don’t have a lot of time for prep work and by
replacing the regular cheese and regular sour cream with lighter versions, and
having extra lean meats, you can cut the fat content quite a bit without a lot
of fuss and they taste just as good! If
